PAULADECKERA very good and easy recipe. But let the cream cool to room temp before adding to the caramel--I added it straight from the fridge and the caramel seized up. I had to really work it to get all the chunks out. Gingersnaps were a little bit overpowering so we used apples, pears, and pound cake.
