This dish converted me into an eggplant lover. The sauce is so delicious and versatile enough that I always double the sauce recipe.

This is a huge hit at parties as an alternative to cocktail sauce. It also makes a great sandwich spread for fish sandwiches or chicken, etc.

This was so thick and pasty, like a bad bechamel sauce.  I even subbed half and half for the cream and tried adding more chicken stock to thin it out.  It didn't help.  What a disappointment!
