Corn and Zucchini Enchiladas with Chile Sauce

These enchiladas are amazing and so versatile ! I have tried them with many different combinations of veggies inside and it is easy to amp up the heat to suit your own tastes although everyone I have shared with agrees this sauce is perfect !
