This was a very good soup. I think I would add the ginger to the cooked soup so you can control the ginger taste and then add the creme fraiche. I used a 16 oz. bag of frozen shelled edamames and the texture was nice and thick.

These were good but they were too big. I would make about 24 and cook them for less time. I made 3 batches at once in a convection oven and baked them for about 12 to 15 minutes. Let them cool completely before trying to remove them.
