Surprisingly, it took a bit of convincing for "Espirt Japon," Japan's answer to Anthony Bourdain’s "Parts Unknown," to get Tyson Cole, the Best New Chef alum behind Uchi and Uchiko in Austin, to jet off to Japan earlier this fall.
“We’re in the middle of new restaurant openings, and I wasn’t sure I could take the break,” says Cole. “But after some thought, guidance from colleagues and a thumbs-up from the family, I embraced the trip as a way to reconnect with the people and the food that inspired Uchi in the first place.”
