  • Grilled Chicken and Vegetable Quesadilla

  • 1 chicken breast
  • Salt and freshly ground pepper
  • 1 small red onion
  • 1 zucchini
  • 1 yellow squash
  • 1 cup roasted red peppers
  • 1 cup grated cheddar cheese
  • 4 whole-wheat tortillas
  • Fresh Tomato Sauce
  • 3 whole plum tomatoes
  • 1 shallot thinly sliced
  • 2 cloves garlic
  • 4 tablespoons olive oil
  • Salt and freshly ground pepper
  • 4 leaves, torn
  • ¼ cup chopped parsley

  • 1Preheat the oven to 350 degrees. Butterfly the chicken breast and season with salt and pepper. Place the chicken on a hot grill and cook for 4 minutes on one side, flip and cook for another 4 minutes. Remove from the grill and let cool, then dice the chicken into 1-inch pieces.
  • 2Dice the red onion, zucchini and squash and sauté in a pan for about 2 minutes or until vegetables are soft. Add the roasted red peppers and heat until warm.
  • 3Spread cheese on half of each tortilla and place grilled chicken and vegetables on top, covering with another layer of cheese. Fold the tortillas in half and place them in the oven for 5 minutes until cheese melts. Slice each into four pieces and serve with Fresh Tomato Sauce.
  • Fresh Tomato Sauce
  • 1Cut tomatoes in quarters and remove stem, sauté with shallot, garlic and olive oil. Season with salt and pepper, add herbs and cook for about 15 minutes.
  • 2Puree sauce and serve warm.
