1Put the vinegar and water in a big pot. Add the Old Bay seasoning, star anise and peanuts. Find a plate that is just smaller than the diameter of your pot. Place the plate on top of the peanuts to weigh them down and keep them under water. Bring the water to a boil.
2Reduce the heat and simmer for about 6 hours, or until the peanuts are very tender. Turn off the heat and transfer the peanuts to a large clean bowl. Serve immediately or store them in jars or resealable bags with some of the cooking liquid to keep them moist. They will keep in the fridge for about a week.
