Bull Testicles, West

This provocative dish of sliced, battered, deep-fried testicles—usually of the bull or bison—goes by some rather innocuous names, including Rocky Mountain Oysters and Prairie Oysters. Its popularity has spawned an annual festival in Clinton, Montana, the Testy Festy, nearing its 30th year.
