2006 This 16-seat restaurant, Daniel Rose’s first, was a mega-hit with food critics, giving him the momentum to open a larger place—and also paving the way for other ambitious American chefs in Paris. He might be Chicago-born, but Rose uses traditional French ingredients to create both contemporary and classic dishes—like veal two ways, in confit with orange, and cooked sous-vide into salty-sweet “candy.”
