Alain Senderens

1985 Chef Alain Senderens is one of Paris’s titans of nouvelle cuisine, the creator of iconic dishes like lobster with vanilla. Senderens still innovates at his namesake restaurant; he gave up his three Michelin stars in 2005 and turned it into a casual-chic space, where he riffs on some of his signature dishes, like open raviolo with lobster and vanilla.
