1914 This tiny food shop celebrates Spain’s passion for conservas (conserves). The menu evolved in the mid ’90s when fifth-generation owner Quim Pérez began creating inspired tapas from canned and preserved foods. Behind the counter, he piles toppings onto thick crackers: Galician ham under a caper relish, fat mussels over tomato jam with herring eggs.
