Salmon Rillettes

For Anna Zepaltas’s rillettes, inspired by a similar dish at Thomas Keller’s Bouchon bistro in the Napa town of Yountville, she blends fresh salmon and butter with hot-smoked salmon to give the rich spread extra-rich flavor.
