Chicken-and-Rice Salad with Pesto Yogurt Dressing

Dinner doesn’t get much simpler than this: Boil some rice and toss it with pesto, yogurt, and rotisserie chicken from the supermarket. Leftover cooked chicken or turkey will work just fine, too.
