Beet and Red Cabbage Salad with Lentils and Blue Cheese

Malin Elmlid's friend Emma Jessen Krut contributed this salad to the potluck; it's hearty enough to stand alone as a main course. Because there are so many ingredients, including bacon, lentils and cabbage, she dresses it very simply with lemon juice and olive oil.
