F&W Best New Chef 1999> John Besh added a bistro to his acclaimed local restaurant empire in 2006. The menu convincingly mingles local classics with dishes that allude to the chef-owner's training in Germany and France; it also includes some of the best charcuterie in New Orleans. We loved: Redfish meunière; blanquette of veal cheeks.
