Chocolate Mousse

"I get bored with standard chocolate mousse," Murphy says. "Adding the coffee gives it what I call an 'undertow' along with a great earthiness." To match the dense, intense chocolate, Lombardo loves the 2002 Hunt Country Late Harvest Vignoles from New York's Finger Lakes, which has notes of pineapple: "It's like dipping a perfect piece of pineapple into the chocolate—the ultimate fondue."
