A classic Southern shrimp boil involves cooking a kettle of shrimp, corn and sausage with pickling spices, notably bay leaf, cloves and mustard seed. Here, all the ingredients are tucked inside foil packets, seasoned with Old Bay and cooked right on the grill.
Grilled Corn with Queso Fresco and Lime-Tarragon Butter
This recipe is based on typical street food in Oaxaca, Mexico, where Michelle Bernstein once lived. The corn is typically smothered in mayonnaise, dipped in cheese and then covered with a spicy chile powder. Here, Bernstein adds a little melted butter for an American accent. She uses a powdered-sugar shaker to apply an even coating of the chile powder.
"If it were up to me, I would throw everything on the grill," says Tim Love. Case in point: He cooks tomatoes and scallions over a hot fire for a simple salad flavored with a little lime juice and crumbled cheese.
These sweet-savory glazed hot dogs were inspired by a dish Marcia Kiesel discovered at a Manhattan Chinatown restaurant. They're cut in a crosshatch pattern, which makes the franks cook even faster, and served in a grilled mustard-brushed croissant.
