Cabbage-and-Kale Soup with Farro
"I love a really flavorful pot of greens," says Melissa Perello. For this kale-and-cabbage soup, she uses just a little bit of pancetta and a Parmesan-cheese rind to give the broth a rich flavor. "It's definitely the kind of dish that tastes even better the next day," she says.
Sour Fish Soup with Napa Cabbage and Enoki Mushrooms
The inspiration for this dish is a bracing soup made with whole fish that Zak Pelaccio likes to eat at Sichuan Dynasty restaurant in Flushing, Queens. "They use it to encourage digestion," he says. Does it work for Pelaccio? "I'm always hungry," he says. "I'm really not a good judge."
This soup is packed with shrimp, pork, mushrooms, noodles and cabbage, so it's a terrific one-bowl meal. Grace Parisi delicately seasons the broth with store-bought dashi, a Japanese stock made from dried bonito (tuna) flakes.
