The PopCycle; Austin

Lindsey Byrd graduated from the California Culinary Academy in San Francisco and apprenticed at Le Chateaubriand and Le Dauphin in Paris, where she worked at the dessert station. She brings those chops to pops, creating varieties like buttermilk–lemon thyme and roasted plum ginger. She bikes the popsicles through Austin with her business partner Elizabeth Carroll. Despite Austin’s heat, the duo manage: “Thankfully, there are popsicles always readily accessible,” Carroll says.
