Taco Pedaler; Portland

Melanie McClure surfed and taco-ed her way through Mexico from Baja to near the Belizean border. She has found a way to bring Mexico’s tastes and street vending style back to Portland, using a tricked-out tricycle. Now three carts strong, Taco Pedaler hand-presses its own corn tortillas on-site and fills them with shredded chicken, beef, carnitas-style pork or pinto beans. McClure also makes her own salsas, including a (tomato-less) mango pico de gallo and a spicy tomatillo-serrano pepper number, to augment the entirely gluten-free menu.
