Like many Iberian-obsessed sommeliers, Michael Maller is trying to convert diners to the joys of sherry. At this new tapas restaurant, he’s doing his part by offering five different sherry flights on the all-Spanish wine list. He also likes to suggest pairings with chef Matthew Kelly’s Spanish dishes, which utilize Southern ingredients: For the chicken-fried chicken skin with tangy piquillo chowchow, Maller serves El Maestro’s Sierra Fino, a salty, minerally sherry. 109 W.
