Tomato-sauce braised pork necks are the key to the outstanding juicy meatballs at this casual offshoot of chef-owner Tony Mantuano’s Spiaggia. First the pork necks are braised in a sauce made with San Marzano tomatoes, then the meat is picked off the bone and combined with pork shoulder, pancetta, Calabrian chiles and milk-soaked Tuscan bread.
