In a converted Victorian industrial building overlooking West London's Grand Union Canal, Dock Kitchen sits directly above Tom Dixon, a home design shop known for its cutting-edge light fixtures—like a tripod of illuminated disco balls. A raw aesthetic complements chef Stevie Parle's fly-by-the-seat-of-his-pants cooking style, which is inspired by fleeting ingredients and recent trips. The lamb biryani, for example, is cooked in a traditional clay pot from Tamil Nadu, a state Parle visits in India.
