Thomas Keller's upmarket café and bakery combines house pain au lait with a supermelty blend of Fontina and Gruyère cheeses. While both NYC locations (at Time Warner Center and Rockefeller Center) serve the comforting sandwich alone, it's great with Bouchon's vegan tomato soup to counter the buttery richness.
