Andrew Zimmern Hunts and Gathers
We foraged for these beautiful chicken-of-the-woods mushrooms on the grounds of the Biltmore Estate in Asheville, North Carolina. These mushrooms literally taste like chicken. We took our goods to the Market Place restaurant, where I was thrilled that the chefs recognized all the different types. Nothing like consuming a poisonous mushroom to ruin your day! But seriously, the commitment to serious food knowledge in this town, especially food from fields and forests, is inspiring.
