Four years ago, F&W Best New Chef 1999 Rocco DiSpirito barely knew what a triathlon was. He now trains six days a week and has completed eight of them, including two ultra-intense Ironman 70.3 races—that's 1.2 miles of swimming, 56 miles of biking and 13.1 miles of running each time.
