After visiting Austin in 2010 and admiring the city’s inventive food trucks, former Flour + Water pizzaiolo Jon Darsky returned to San Francisco with his sights set on building a mobile pizzeria. The result: a 30,000-pound Freightliner truck topped with a 20-foot shipping container, carrying a 5,000-pound wood-burning oven that is protected with massive air bags during transit.
