"This dish is really about familiar ingredients used in a different way," says pastry chef Stephanie Prida. "I started with salt and pepper and we built upon that." To assemble this dessert, a rich chocolate mousse square and dollop of olive oil pudding (made with oil from Nick Sciabica & Sons from the San Joaquin Valley) are topped with a delicate spray of hardened chocolate. Prida accents the dish with ground sweet peppercorns and powdered milk meringue for contrast, and finishes with freshly picked flowers and herbs. manresarestaurant.com
