The Poor Porker (Lakeland, FL)

With just $300 in savings and a simple food idea—artisanal beignets—Robyn Wilson and Jarrid Masse have brought a moribund farmers’ market back to life. When they first arrived in the central Florida town of Lakeland, the local produce market was “all wholesalers, no farmers,” recalls Wilson. But customers lined up for the couple’s beignets—with toppings like bacon and maple syrup—and now the market is filled with local farmers, artisans, bakers and even Masse’s mother, who runs a flower stand. thepoorporker.com.—Daniel Gritzer
