2011 Best New Chefs' Simplest Recipes
One is a Peruvian native whose first cooking job was at Benihana; another is a Top Chef star. The Best New Chef 2011 winners have very different backgrounds and cooking styles that reflect the amazing diversity in the restaurant world right now. Yet they have a few things in common: They've all run a kitchen for no more than five years, and they all blew us away when we traveled around the country to taste their outstanding food. Kohlrabi tastes a lot like a broccoli stem, but it's milder and sweeter and the texture is crisper. Chef Stephanie Izard of Chicago's Girl & The Goat thinks it's an underappreciated vegetable, so she makes it the star of her delicious salad, served raw in very thin slices. In fact, she likes the dish so much that she takes some home to eat on the couch after service a few times a week.
