Chef Yasu Hashino’s bistro serves exemplary sushi, but it also offers hard-to-find Japanese classics such as <em>subimiyaki</em> (charcoal-grilled dishes) and playful selections such as potato chip–like gobo sticks and wonton-wrapped shrimp fondue.
