Noted architect Kengo Kuma created the striking steel-mesh screen and glass building and design stars Super Potato concieved the modern minimalist interior, but the star of this kappo (cut and simmer) restaurant is chef Hiromitsu Nazaki, whose seasonally informed omakase menu earned two Michelin stars in 2010. Diners seated at the natural-finish counter watch the staff prepare each of the nine courses, including delicacies such as fried fugu (blowfish), abalone-topped seaweed, radish soup with cod, and abalone in a sweet sake soup.
