Tony Luke, Jr. founded his South Philly sandwich eatery in 1992 and put a gourmet twist on his hometown’s traditional cheese steak. At a no-frills counter under fluorescent lighting, the shop sells sandwiches ranging from the chicken cheese steak to the pork Italian — a roll stuffed with roasted pork, provolone, and broccoli rabe. On the way to the outdoor-only tables, photographs of celebrity visitors like Nancy Sinatra and Robert Redford line the walls. In fact, Tony Luke’s has become so popular, the owner plans to open locations from the West Coast to the Middle East.
