Sisters Ada and Ebe Concaro's cooking has been the standard-bearer of Argentinean cuisine for the past 35 years, and along with Ada's son Federico Fialayre, they're still inspiring new generations of chefs at their formal restaurant in the Hotel Panamericano. The meat dishes are exemplary, prepared with ingredients like water buffalo from the Entre Rios province, Patagonian lamb and suckling pig. The dining room overlooks one of the world's widest avenues, 9 de Julio.
We loved: Roasted quails with plum sauce and black currants.
Insider tip: A tasting menu is available by request one week in advance.
