The Tilbury Hotel, located amids the restaurants along the wharf, is quite possibly one of the most popular pubs in Sydney. The bar features an indoor area complete with a white tile bar and wood floors, but the most sought-after seats are beneath the olive and frangipani trees on the patio. Chef Bryan O’Callaghan has created a menu of Italian-influenced Australian cuisine, including such dishes as housemade fazzoletti with wild boar ragout and Cootamundra lamb rack with turnips, peas, and mint. Cocktails are available but should be passed over in favor of beers like the Coopers Pale Ale.
