Master chef Teiichi Sakurai spent time in Tokyo honing the art of the buckwheat noodle for his tranquil soba restaurant. His exemplary zaru (cold) soba would please even die-hard purists, but the warm, brothy versions—grab the one with grilled scallions and duck—are also sublime.
