Wolfgang Puck was one of the first celebrity chefs to launch a restaurant in Las Vegas, back in 1992; 16 years later, it's still terrific. Last year, <a href="/bestnewchefs/?year=2004&chef=185232E8-6DBB-4819-9AA44A34780D7C04">Eric Klein (an F&W Best New Chef 2004)</a> took over the kitchen; in addition to Spago classics, he serves appealing dishes like tuna tartare tacos.
We loved: Lobster salad with grapefruit and basil ; Hunan-style wagyu flatiron steak.
