Run by acclaimed chef-owner Enrique Olvera, Pujol is often lauded as the city's best Mexican nouvelle restaurant. Located in the Polanco district behind a minimalist, wood-and-glass façade, the restaurant has an equally modern interior with dark gray walls, hardwood floors, and classic white tablecloths. Chef Olvera, who trained in New York and Chicago, reinterprets traditional Mexican ingredients and techniques, creating inventive new dishes such as an amuse-bouche of skewered baby corn with coffee-infused mayo, lime, and salt, all served in a small glass tube. Entrées may include the cuitlacoche (corn smut) tamales with green tomato sauce and whipped cream.
