Located near the stadium and the Royal Swedish Opera, Proviant is fashioned after a French brasserie, with black and white walls, glossy black seats, and white tablecloths topped with red-checked fabric. Chef-owners Haken Thor and Mattias Edlund change the menu weekly, but a Swedish theme with innovative international accents remains the same. Previous entrees include North Sea cod with wasabi-flavored cream of aubergine or fried sweetbreads with porcini lasagna, Brussels sprouts, and truffles. The popular Sunday dinners center on classic French cuisine such as coq au vin and cheese platters.
