Part of the Horned Dorset Primavera, Rincón's most elegant resort, this sophisticated restaurant seems a world away from the beachy shacks and bars that line the rest of the waterfront. Well-dressed patrons arrive before dinner for sunset cocktails on the covered, seaside veranda; then it's up the grand stairs and into the marble-floored dining room, which is manned by a small army of dinner-jacketed waiters. The menu of French-influenced Caribbean dishes changes nightly, but might include a vegetable fricassee or lobster medallions in orange beurre blanc.
Tip: Splurge on the nine-course tasting menu ($110 per person) to sample the best the chef has to offer.
