Poste Moderne Brasserie is technically a part of the Hotel Monaco, but it's housed inside the 1841 General Post Office building. The restaurant has its own entrance accessed through a carriageway and a courtyard. Poste and its chef, Dennis Marron, are committed to sustainable and eco-friendly practices, and much of the restaurant’s French-influenced New American cuisine is crafted from produce and meats sourced from its own on-site garden and local providers like Freshfarm Market. Menu selections include pan roasted North Carolina trout with shrimp and lemon oyster sauce and coq au vin with kabocha squash, garden kale, and turnips.
