New Orleans–born Aaron Burgau got his start working with some of the city's most progressive chefs, such as <a href="/bestnewchefs/?year=1989&chef=AB9CE993-7CC1-49CC-BF5CB6B6E43F81A3">Susan Spicer (an F&W Best New Chef 1989)</a> of <strong>Bayona</strong>. In 2007, he opened this cream-colored dining room, where he fuses Louisiana cooking with French bistro influences.
We loved: Boudin-stuffed smoked pork chop.
