Accessed via its own gold-plated elevator tucked away in the lobby of the Grand Hyatt (it’s floor number 8—a lucky number in Cantonese), the restaurant draws a midday crowd of tycoons and tai tais—rich wives—with its à la carte dim sum menu (so much more civilized than waving down waitstaff with dumpling-filled pushcarts) and other seasonal specialties. At night, the twinkling lights from the harbor lend an elegant mood—and so do dinner dishes like steamed garoupa and deep-fried scallops stuffed with pear and shrimp mousse.
