Nobu Matsuhisa's Peruvian-influenced Japanese dishes are now served at more than 15 outposts worldwide. But this new location, enclosed in a dramatic pagoda with fabric-draped ceilings, serves items you won't find elsewhere: razor-thin slices of conch seared in sesame, ginger, and yuzu; and a sophisticated conch ceviche.
