At Nick-San in downtown Cabo, the fusion of Mexican and Japanese cuisine is the result of a partnership between chefs Angel Carbajal and Masayuki Niikura. The open dining room accommodates 130 with both table and sushi-bar seating. Sushi with a Mexican twist is the specialty here; a house favorite is the Clear Lobster Roll, made with lobster tempura, avocado, mango, masago (flying fish roe), and lobster sauce. Cilantro-spiked sashimi, an ahi tuna tostada, and crab-stuffed chiles are among other menu options.
