Food and science converge at Moto, a “molecular tasting room” set among the warehouses of Fulton Market. Practicing the art of molecular gastronomy, Chef Homaro Cantu utilizes everything from Class IV lasers to liquid nitrogen while preparing innovative postmodern dishes, such as a Cuban sandwich disguised as a cigar with edible “ashes.” The restaurant’s minimalist, gray-toned interior focuses attention on the ever-changing tasting menu, which is printed on edible paper and may include sauces served in pipettes, deconstructed soups that turn from solid to liquid in the mouth, and frozen flapjacks “cooked” tableside on a box of liquid nitrogen.
