Vietnam meets the Pacific northwest at Eric and Sophie Bahn's Capitol Hill restaurant. Since 1999, Monsoon has been creating dishes using organic, regionally sourced ingredients, with a preference for small-scale producers. The wine list combines Old and New World, but matches with a preference for boutique-size vineyards as well. The dining room has a bright, cream-and-blond-wood palette, and a feature wall highlights an artful installation of conical, nòn là hats. Pho is the most popular lunch choice, served with an oxtail broth and wagyu beef. At dinner, grilled meats and seafoods tempt, along with carmelized idaho catfish in claypot.
