This Michelin-starred restaurant in Via Veneto is located on the top floor of the Hotel Splendide Royal. Glass terrace doors open to a view of Villa Medici, Trinita del Monti, and Saint Peter's Basilica. The decor is luxurious with ornate moulding and fine crystal and porcelain antiques. Chef Guiseppe Sestito has been at the helm since the Italian-International restaurant opened in 2001, and his menu emphasizes fresh, artfully presented ingredients. Sea bass tartare with fennel salad and orange makes for a coral-hued composition, and scallops are punched up with fruit tempura. The wine list is global with a heavy Italian focus.
