Chef-owner Shingo Chibana makes his house-specialty soba (Japanese buckwheat noodles) from scratch six to eight times a day at Matsugen. The master is frequently seen cutting the noodles by hand in the middle of the dining room. Soba can be ordered hot or cold, such as the chilled soba goma-dare (noodles with sesame sauce) or the boiled soba yamakake (noodles topped with grated yam). The menu also includes tempura, salads, and izakaya-style appetizers, like tuna poke and deep-fried shrimp cake with shitake mushrooms.
