Located at the Matachica Resort and Spa on Ambergris Caye's North End, this thatch-roofed restaurant uses fresh ingredients to add local flavor to classic European dishes such as penne a la carbonara and seafood fettuccine. Inside, the tables and chairs are made of regional mahogany, and Belizean artists contributed the delicate ceramic decorative pieces and colorful contemporary paintings. The menu bounces around the globe for all three meals, as guests can start the day with a veggie omelet loaded with cheese, vegetables, and herbs; or stop by in the afternoon to lunch on gazpacho or a blackened grouper sandwich. The substantial dinner mains may include grilled whole snapper with grilled vegetables and coconut rice or mango-glazed pork chops, char-grilled and served alongside fried yucca.
